Cross Country Cookin



Natalie asked me to do a recipe swap with her and of course I said yes because I am always in need of some new recipes :) The idea is she sends me a recipe. It can be a side, main dish, dessert, basically anything. Then I send her one. We cook it that week and then let the other know if we liked it or not. So far so good. This soup recipe was right up my alley. It was easy to make and delicious! It was a bit spicy for my kiddos but great for the hubby. We loved it. I thiink next time I will use not as many green chilies. Now after you write down this recipe hop on over to her blog and check out what she made :)



Chicken Enchilada Soup

4 cups Chicken broth
1 - 14 oz. can red enchilada sauce (medium)
diced green chilies
medium onion
1 garlic clove
can of corn drained (or if you have a bag of frozen corn like 1 cup)
1 tsp cumin
salt and pepper to taste
already cooked shredded chicken

Garnishes
sour cream
shredded cheese
tortilla chips

*optional
cilantro
avacado

saute onion and garlic until soft then add everything else except chicken and bring it to a boil. lower heat, add chicken and simmer for like 5 minutes.
Serve in bowls and top with desired garnished. I always crumble our tortilla chips into it instead of leaving them whole. ENJOY!
